Soak 1 cup bulgur wheat—fine (Kisirlik Bulgur) in 2 cups of warm tap water for 10 minutes. Drain.
Combine: 3/4 cup fresh mint 3/4 cup parsley 4 scallions and 2 middle-sized tomatoes, finely chopped, with 2—3 tablespoons tomato paste, 2—3 tablespoons olive oil, 2—3 tablespoons lemon juice, sumak, salt, pepper, peperoncino. Roll.
1—2 tablespoons of the mixture in a lettuce leaf.
